Ed, it has been so long, I can't remember which recipe I gave you. Here are several from my various cookbooks. I think it probably was the first or second one. Hope you and Kathy are doing well!

Hush Puppies
1 cup corn meal
1 cup flour
2 teaspoons baking powder
1 teaspoon sugar
1 pinch baking soda
½ teaspoon salt
1 egg
1 cup buttermilk
1 medium onion, chopped fine
1 tablespoon Oil
Oil for frying
Combine buttermilk, pinch of baking soda, egg, onion, and 1 T oil. Sift together the dry ingredients and mix into the buttermilk mixture. Stir until well mixed. Drop from the end of a spoon into deep hot fat (350 degrees) until golden brown. Drain on paper towels.

Hush Puppies
1 1/2 cups cornmeal
1/2 cup (125 ml) all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar
3/4 cup milk
1 slightly beaten egg
2 tablespoons vegetable oil
Parsley
2 chopped shallots
Preparation
Mix all the dry ingredients in a large bowl;
combine the milk, egg, 2 tablespoons oil and shallots in a small bowl;
stir the milk mixture into the dry ingredients; stir in more milk if the mixture is too thick to drop from a spoon;
heat about 2 inches of oil in a heavy pan;
drop batter into the hot oil by spoonfuls; fry about 3 min. or until golden brown;
remove with a slotted spoon; drain on paper towels; serve hot.

Paula Dean's Hush Puppies

6 cups peanut oil
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small onion, chopped
1 cup buttermilk
1 egg, lightly beaten
Using a deep pot, preheat oil for frying to 350 degrees F.
Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion.
In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hush puppy is dropped in the oil. Fry until golden brown, turning the hush puppies during the cooking process.
Yield: 35 hush puppies

Charleston Hush Puppies
1 c flour
1 c corn meal
2 eggs
1 c buttermilk
1 tsp baking powder
1 tsp salt
2 tsp garlic powder
Minced onion if desired

Hush Puppies
Oil for deep frying
3 tablespoons Martha White® Self-Rising Flour
2 cups Self-Rising Corn Meal Mix
1 to 2 tablespoons finely chopped onion
1 cup milk or buttermilk
1 egg, beaten
In deep fryer or heavy skillet, heat 2 to 3 inches oil over medium heat to 375°F. In large bowl, combine corn meal mix, flour and onion; mix well. Add milk and egg; mix well. Let stand 5 minutes.
Drop batter by heaping tablespoonfuls into hot oil. Fry until golden brown, turning several times. Drain on paper towels. Serve warm.
